What ingredients do I use for the Beetroot Carrot idli

You need very few ingredients to make the delicious colorful idlis. Though you must be having all this ingredients at home, it is always better to have them ready so that the cooking will be cool experience.

QUANTITY OF INGREDIENTS for Beetroot and Carrot Puree

chopped beetroot  –  1 cup

1 green chilli 

chopped carrot – 1 cup

Salt to taste

1 tablespoon coriander leaves

2 Cups of Rice idli Batter

Steps to prepare the Beetroot Carrot Idli 

You must prepare the beetroot and carrot puree seperately. Once this is ready it is very simple and fast recipe to make the carrot and beetroot idli. Let us get started on the step by step procedure of the healthy and colorful idli recipe.

Keep a vessel on the stove with water

Take a small vessel and place it on the stove. Add one cup of water which is sufficient to boil one cup of beetroot. Turn on the stove and keep the flame in medium.

Add chopped beetroot and boil for five minutes 

Take a small beetroot and peel off the skin. Cut them into small pieces. Add the cut beetroot to the boiling water and cook it for five mins.

Strain the beetroot and let it cool down

Once you cook the beetroot, use a strainer and transfer the boiled beetroot to a small bowl. Let it cool down on its own before you transfer to the blender to make the puree

Add the beetroot and chilli to the blender and make beetroot puree

Now add the boiled beetroot and 1/2 green chilli to the blender.  Also add little salt to taste. Turn on the blender to blend it to a paste. Now the beetroot puree is ready. Transfer the beetroot puree to a small bowl

Take a small vessel and place it on the stove. Add one cup of water which is sufficient to boil one cup of carrot. Turn on the stove and keep the flame in medium.

Take a medium sized carrot and peel off the skin. Cut them into small pieces. Add the cut carrot to the boiling water and cook it for five mins.

Strain the carrot and let it cool down

Once you cook the carrot, use a strainer and transfer the boiled carrot to a small bowl. Let it cool down on its own before you transfer to the blender to make the puree

Add it to the blender and make carrot puree

Now add the boiled carrot and 1/2 green chilli to the blender.  Also add little salt to taste. Turn on the blender to blend it to a paste. Now the carrot puree is ready. Transfer the carrot puree to a small bowl

Take the rice idli batter to a bowl

You must now transfer the fermented batter you prepared into a bowl and keep it aside. You can also add to adjust the consistency of the batter while adding the water if the batter is thick.

Add 1 cup of water to the idli cooker

Take the idli cooker and add one cup of water and place the idli cooker on the stove.

Grease the stainless steel Idli Moulds

Its important to grease the idli moulds so that the idli will slid off easily from the moulds. You may use ghee or oil in the moulds and spread it well.

Fill the mould with little beetroot puree

Once you grease the moulds, take a tablespoon of beetroot puree and place it in each of the idli moulds. Make sure to place the puree to the center of the moulds

Place a layer of idli batter on the beetroot puree

Take the bowl of rice ldli batter and use a ladle to pour the idli batter into the moulds.

Please ensure that you do not fill the idli mould to the brim. Because you will place layer of batter again after you place the stuffing. After steaming, the idlis will rise, so, make sure you leave a little space for them to rise

Fill the mould with little carrot puree on top of idli batter

Take a tablespoon of carrot puree and add on top of the idli batter in each of the moulds. Place the puree as center as possible in the mould . Also take the chopped coriander leaves and place it in the center of each mould. This helps to enhance the flavor.

Place the stainless steel Idli moulds in the idli cooker

Turn on the stove on which the idli cooker is placed. You must now place the idli moulds into the cooker and close the lid.

Make sure the lid is closed well so that the steam does not escape through the lid

Cook the Beetroot carrot idli for ten mins

Let the beetroot carrot idli to cook for ten minutes on the stove.

You can test if the idli is cooked well by running through idli with the knife. If the knife is clean the idli is cooked well.

Remove the stainless steel Idli moulds

You must now remove the idli moulds out of the idli cooker and place it to cool down by itself for sometime.

Key Tips for easy cooking of Beetroot Carrot idli

While this looks very simple and easy recipe, there are some important tips you must follow to have a good experience in the kitchen. I am sharing some of the tips which helped me to get this delicious beetroot carrot idli.

1. Allow idli to cool on its own

Always allow the idli to cool down on its own. When you try to take the idlis from the moulds before it is completely cooled down. There are lot of chances for the idli not to slid easily off the mould.

2. Reuse the beetroot n carrot stock

After the beetroot and carrot are boiled and water is strained to separate the vegetables. The vegetable stock can be stored for future use in some other dishes without wasting it.

3. Add coriander leaves to enhance the flavor

Add coriander leaves to the idli will not only enhances the flavor and it also has many health benefits. As much as possible you must try to add curry leaves and coriander leaves to the cooking to enhance the food taste and also get the health benefits from them

4. Make the puree after the boiled vegetables are cooled down

Let the boiled vegetables to cool on its own. This is to avoid putting the hot content to the blender. Also ensure we dont add the content to the brim in the blender as it makes it difficult to grind.

5.  Make sure the blender cover is not loose

You must ensure the blender cover is not loose so that you can avoid the puree splashing out of the blender.

6.  Add the cut vegetables to blend

Always ensure to add the cut vegetables to the blender than the whole vegetable. Reason being, it might not grind well. The vegetable will not grind to a paste and rather would be chunky.
