In my blog i have used potato, carrot and beans. While you can experiment with any vegetables or vegetables you family like to eat.  Let us now get started to understand in detail on the recipe.

What are the ingredients for Stuffed Vegetable Idli 

Mixed vegetables are used for making the stuffed idli along with the idli batter is all it takes to make the stuffed idli. However if you want to make the idli batter , it is important to note the ingredients for the idli batter as well

EXACT QUANTITY OF INGREDIENTS EXPLAINED FOR IDLI BATTER

Idli rice – 2 Cups

Urad dal (Black lentils) – 1/2  cup

Water – 2 Cups

Flattened Rice – 1/4 cup

Fenugreek seeds – 1/2 teaspoon

Salt – According to taste

QUANTITY OF INGREDIENTS for Vegetable Mixture

Mustard Seeds – ½ teaspoon

1 pinch of Asafoetida or hing

1 teaspoon of Turmeric powder

5-6 Curry Leaves

Vegetable Oil – 1 Tablespoon

1 tbsp Coriander Leaves

Salt to taste

1 Green Chili chopped

potato – 1 cup finely chopped

 beans – 1 cup finely chopped

carrot – 1 cup finely chopped

Steps to prepare the Stuffed Vegetable Idli 

Before you start making the stuffing for the Vegetable idli, I would like you to learn the recipe of idli batter. Its a traditional method of making the Idli batter. Quality of your idli depends on how good your batter is. You can also use readymade rice idli batter. However if you are keen to make your own idli batter You must follow the recipe step by step to make a perfect batter.

Soak the rice in a small bowl over night

In a large bowl , add 2 cups of rice and add enough the quantity of water. Rinse the rice twice in the water and clean the rice. You should then soak the rice in a bowl. Make sure you soak the rice in enough quantity of water and rest it overnight.

Soak the Urad dal (Black lentil) , Flattened rice and Fenugreek seeds in a separate bowls for two hours

Though we call it Black lenthil, the outer black cover is removed and sold in the market. So the lentil looks white inside.

In a  bowl ,rinse the urad dal ( Black lentil)  twice or thrice and soak it in the water. You should make sure you use thrice the quantity of water to soak or two hours. Reason being, the lentils swell up double the size.

Add required water in a another bowl and rinse the flattened twice. Soak it for two hours with enough water as this will also swell up double. This is another important ingredient to make the idli soft.

In a small cup , add 1/2 teaspoon of fenugreek seeds and soak in water.

Grind the Soaked Ingredients into a Batter

Set the timer to 30 minutes if its an automatic grinder. Other wise you can keep grinding the batter for 30 mins in the grinder.

Add each soaked ingredient one by one to the grinder and leave it for 30 minutes.

After 30 minutes, nice and smooth idli batter will be ready

Transfer the batter to the large bowl and leave it for Fermentation

Now transfer the batter to a large bowl.

You should make sure the batter is only filled half of the bowl. Because after the fermentation, the batter rises to the top. If filled more than half, the batter might spill over.

Leave the idli batter covered overnight and fermented batter is ready. You will clearly see how much the batter has risen in the bowl.

Cut the vegetables into small pieces

Take the all the vegetables like potato , carrot and beans and chop them into very fine pieces and keep them aside.

Please make sure you chop them to fine pieces as this will be used as the stuffing  hence they must be cut finely

Add the chopped potato, carrot and beans to the vessel

Take vessel to boil all the chopped vegetables. Turn on the stove and maintain the medium flame.  Add the vegetables one by one to the vessel.

Cook the vegetables for ten mins

Cook the vegetables for ten mins so that they are cooked enough so that it takes less time for the stuffing to cook.

Strain the cooked vegetables and keep aside

Use a strainer and separate the cooked vegetables. Keep it aside to cool for some time. The vegetable stock from the cooked vegetables can be stored for future use.

Place the pan on the stove and add oil

You must now place the frying pan on the stove and maintain a medium heat so that your tempering doesn’t burn. Add oil to the pan and heat it.  You can use any  vegetable oil while i have used groundnut oil as it enhances the flavor.

Add mustard seeds, curry leaves and green chillies

You must add 1/2 teaspoon of mustard seeds to the oil. Once the mustard seeds splutters add the curry leaves  and saute well.

Now add the finely chopped green chillies and asafoetida . Chilies is the only ingredient that gives the spiciness for the stuffing.

Add the cooked vegetables to the pan

You must add the cooked vegetables to the frying pan and saute well for a min. Now ready to be added with the turmeric powder and salt.

Add the turmeric powder and salt to the vegetables

Add 1/2 teaspoon of turmeric powder and also salt according to the taste. Saute the vegetables so that its coated well with turmeric powder and salt.

Take the rice idli batter to a bowl

You must now transfer the fermented batter you prepared into a bowl and keep it aside. You can also add to adjust the consistency of the batter while adding the water if the batter is thick.

Add 1 cup of water to the idli cooker

Take the idli cooker and add one cup of water and place the idli cooker on the stove.

Grease the stainless steel Idli Moulds

Its important to grease the idli moulds so that the idli will slid off easily from the moulds. You may use ghee or oil in the moulds and spread it well.

Fill half the mould with idli batter

You must now fill the idli moulds with idli batter. You must ensure not to fill the mould full and fill it only half the mould. Reason being , another layer of batter needs to be added over the stuffing to cover the stuffing.

Place the vegetable stuffing in the middle of the idli moulds

You should place the vegetable stuffing in the center of each mould. Please ensure the stuffing is placed as center as possible.

Cover the vegetable stuffing with idli batter 

After you place the stuffing to the idli, spread another layer of idli batter over the stuffing. So that the entire stuffing is covered by the idli batter.

Place the stainless steel Idli moulds in the idli cooker

Turn on the stove on which the idli cooker is placed. You must now place the idli moulds into the cooker and close the lid.

Cook the vegetable stuffed idlis for ten mins

Let the vegetable stuffed idli to cook for ten minutes on the stove.

Make sure idli is cooked well

You can test if the idli is cooked well by running through idli with the knife. If the knife is clean the idli is cooked well.

You must now remove the idli moulds out of the idli cooker and place it to cool down by itself for sometime.

Serve the vegetable stuffed idlis

The delectable vegetable stuffed idlis are ready to be served. Serve it with hot thakkali gotsu. Sambar is one of the best accompaniment for idlis and you can also serve it with hot delicious sambar as well.  If you want to eat idlis with the vegetable mixed in the idli batter without stuffing them you must try the homemade vegetable idli.

Key tips to have uncomplicated cooking of Stuffed Vegetable idli

I would like to share some essential tips  that I follow, You must ensure to follow them as it gives you a pleasant cooking experience in your kitchen

1.  Good quality batter

Soaking the ingredients for the required amount of time and taking right quantity of the ingredients for the batter is very important to get nice batter.

2. Finely chop the vegetables

Stuffing used for any stuffed idli recipe needs fine texture . To ensure the fine texture, the vegetables are to be chopped finely.

3. Ensure the vegetables are cooked well.

Make sure the vegetables are not either over cooked or under cooked to get the good stuffing. Overcooked vegetables can make the stuffing like a paste and under cooked can make the stuffing chunky.

4. Fill half the mould with idli batter

Please ensure that you do not fill the idli mould to the brim. Because you will place layer of batter again after you place the stuffing. After steaming, the idlis will rise, so, make sure you leave a little space for them to rise

5. Keep the stuffing as center as possible

Place the stuffing as center as possible in the mould so that the stuffing is not seen on the outside of the idli. You must see the stuffing only when its cut into half
