Once you prepare the mutton kheema and keep stuffing masala ready. It takes no time to prepare the stuffed idlis. If you are someone looking for a something new for breakfast in the morning and this is a must try recipe. Let us get started with the step by step procedure of making mutton kheema for the stuffing and also the stuffed idlis.
Place the frying pan on the stove
Take a frying pan and place it on the stove. Turn on the stove and keep the flame in medium. Make sure you always maintain the medium flame to avoid burning the mutton kheema.
Add oil to the frying pan
After few second, add the 2 tablespoon of vegetable oil to the frying pan. You may use any oil. I have used the groundnut oil as i prefer healthy fats to be added to my recipes.
Add green chillies, ginger and garlic then saute well
Once you heat the oil, add the green chillies, grated ginger and 4 or 5 cloves of finely chopped garlic to the frying pan. They all would splutter and then saute them well until the raw smell is gone.
Add onions and fry till it turns brown color
You must now add the finely cut one cup of onions to the frying pan. Saute them well until the onion turns brown in color. This way you will make sure that you cook onion well and caramelized which enhances the flavor of the masala.
Add tomatoes to the pan and saute well
Its now time to add the tomatoes to the caramelized onions and saute them together well. You could also skip adding tomatoes. I have added them to give a little juicy texture to the masala instead of being dry.
Add coriander powder, tumeric powder, salt and chilli powder.
You must now add all the spices one by one to the onions and tomatoes. Add 2 teaspoon of coriander powder, 1 teaspoon of chilli powder , 1/2 teaspoon of turmeric powder and finally salt.
Mix well the spices and saute well
When you add all the spices, the onion and tomatoes starts becoming juicy and they cook faster. Turmeric and salt helps them to cook faster. You make sure to mix all the spices well and saute them.
Prepare the minced mutton
Take the boneless mutton pieces and add them to the Mixer. You can also cut them to very tiny pieces. But make sure to have small pieces but not the big ones. This way it would be easier to stuff them in the idlis.
Add the minced mutton with the masala and saute well
You must add one cup of minced mutton to the frying pan. Mix them well with the masala so that you coat the mutton is evenly with all the spices. Saute the masala well. Close the lid for 10 to 15 mins until the mutton kheema is cooked well
Add coriander leaves at the end and mix well
Finally add the finely cut coriander leaves to the mutton kheema masala and mix them well. Any indian savory dish is not complete without adding the coriander leaves. It imparts an aromatic flavor to the dish.
Take the rice idli batter to a bowl
You must now transfer the batter into a bowl and keep it aside. You can also add to adjust the consistency of the batter while adding the water if the batter is thick.
Place the idli cooker on the stove
Take the idli cooker and place on the stove. Turn on the stove and keep the flame in medium. Make sure you always maintain the medium flame
Add 1 cup of water to the idli cooker
Take the idli cooker and add one cup of water and place the idli cooker on the stove.
Grease the stainless steel Idli Moulds
Its important to grease the idli moulds so that the idli will slid off easily from the moulds. You may use ghee or oil in the moulds and spread it well.
Fill half the mould with idli batter
You must now fill the idli moulds with idli batter. You must ensure not to fill the mould full and fill it only half the mould. Reason being , another layer of batter you need to add over the mutton kheema stuffing.
Place the mutton kheema stuffing in the middle of the idli moulds
Take the mutton kheema stuffing in the bowl. You should place the mutton kheema stuffing in the center of each mould. Please ensure you place the mutton masala as center as possible.
Cover the mutton masala stuffing with idli batter
After you place the stuffing to the idli, spread another layer of idli batter over the stuffing. So that you cover the entire mutton masala stuffing with the idli batter.
Cook the mutton stuffed idlis for ten mins
Turn on the stove and place the idli cooker on it. You must now place the idli moulds into the cooker and close the lid.
Let the mutton stuffed idli to cook for ten minutes on the stove in the medium heat.
Make sure idli is cooked well
You can test if the idli is cooked well by running through mutton stuffed idli with the knife. If the knife is clean the idli is cooked well.
Remove the stainless steel Idli moulds
You must now remove the idli moulds out of the idli cooker and place it to cool down by itself for sometime.
Serve the mutton stuffed idlis

Though the recipes are very simple learn and follow, it is important to know the essential tips for successful cooking. I am sharing some of the important tips i always follow to have a good cooking experience
1. Keep all the ingredients ready
Before you start cooking, keep all the ingredients in one place. This makes cooking more efficient and you won’t forget.
2. Ensure to cook the mutton well
You must ensure to cook the mutton well in the frying pan. Meat needs little extra time to cook than the vegetables
3. Prepare tempering on medium flame
Always prepare the tempering for the mutton masala on a medium flame. If you keep it at a high flame, the tempering will burn and give your mutton masala the bitter taste.
4. Garnish with Coriander leaves
Once all the process is done in making a mutton masala, garnish it with coriander leaves. Aroma from coriander leaves is so good and also helps in the digestion. Many of the indian dishes uses curry leaves and coriander leaves for aroma and health benefits.
5. Do not overfill the idli moulds
Make sure that you do not fill the idli mould to the brim. After steaming, the idlis will rise, so, make sure you leave a little space for them to rise. Ideally, you should fill a little over three fourth of the idli mould.
6. Remove the idlis carefully
Once the idli is cooked, don’t remove it from the mould instantly. If you try that, the idlis may break. Leave it for a minute or two before removing them from the moulds. If you have difficulty removing the idlis, use a sharp object to loosen it from the edges of the idli mould.
7. Easy way to peel the garlic.
Whenever you have to peel the skin of the garlic clove, microwave the cloves for 20 secs in the oven. Let it cool down. You can then try to peel off the skin, they would come off so easy.
7. Use Minced Mutton or Mutton cut to fine pieces
You can use minced mutton or cut them to very tiny pieces. But make sure to have small pieces but not the big ones. This way it would be easier to stuff them in the idlis.
