What are the ingredients for Homemade Vegetable Idli 

All the different vegetables used for the making the vegetable mixture and the tempering ingredients along with the idli batter covers all the ingredient needed to make the tasty vegetable idlis.

RICE IDLI BATTER – 2 Cups 

QUANTITY OF INGREDIENTS for Vegetable Mixture

Mustard Seeds – ½ teaspoon

1 pinch of Asafoetida or hing

1 teaspoon of Turmeric powder

5-6 Curry Leaves

Vegetable Oil – 1 Tablespoon

1 tbsp Coriander Leaves

Salt to taste

1 Green Chili chopped

potato – 1 cup finely chopped

 beans – 1 cup finely chopped

carrot – 1 cup finely chopped

Steps to prepare the Homemade Vegetable Idli 

Complete procedure of the vegetable idli is very simple and easy once the vegetable mixture is ready. Adding the colorful mixture to the idli batter and preparing the idlis is all we need to do. Let us see step by step procedure to understand the process of vegetable mixture and also the idli. You will be amazed at the effortless process of the idli. 

Chop the vegetables finely

Take potato, green beans and carrot.  Rinse them well in water to clean the vegetables.

Cut the potato , beans and carrot very finely to small pieces.

You can try with variety of vegetable while i am using potato , carrot and beans to make it more colorful.

Add the vegetables in pressure cooker

Take a pressure cooker and add 2 cups of water to cook the vegetables. Add all the finely chopped potato, beans and carrot to the cooker.

Cook the vegetables in pressure cooker

Close the lid and turn on the stove. You can cook it until you get two whistles from the pressure cooker.

Place the frying pain on the stove

Take a frying pan and place it on the stove. Keep the flame in the medium heat.  You must ensure that the flame is not too high.

Reason being, too much heat will burn the tempering,

Add oil to the pan

You must now add 1 tablespoon of vegetable oil. you can use any vegetable oil. I have used the organic groundnut oil. 

Since we have cooked the vegetables already, one teaspoon of oil is sufficient as there is no further cooking.

We are just going to add the cooked vegetables to the tempering.

Add mustard seeds and curry leaves 

Once the oil is heated enough, add the 1/2 teaspoon of mustard seeds to the frying pan. Once the mustard seeds starts spluttering, now its time to add the curry leaves.

Curry leaves are to be added to the oil and cooked rather than adding to the cooked food. This way its enhances the flavor of the vegetable mixture.

Add green chillis and saute well

Now add the finely chopped green chillies to the frying pan and saute well This is the only ingredient thats going to give little spiciness to the vegetable idli.

Strain the boiled vegetables to the strainer

Use a strainer and strain all the cooked vegetables and keep them aside.  You can keep the vegetable stock from the cooker for reuse later.

Add the cooked vegetables to the frying pan

Add the cooked vegetables to the frying pan and saute them well. You must sure the tempering is mixed well with the vegetables

Add Asafoetida, turmeric and Salt to the vegetables

Its now time to add a pinch Asafoetida , add 1/2 teaspoon of turmeric powder and then add salt to taste. Turmeric powder gives a nice yellow color to the vegetable idli.

Saute them for two mins

Saute them for two minutes so that all salt and the turmeric powder is well coated to the vegetables.

You must sure that you saute for atleast 2 minutes to ensure the raw smell of the turmeric powder is gone.

Now cool the vegetable mixture for sometime and it is ready to be added to the idli batter

Take the idli batter to a large bowl 

You must keep the rice idli batter ready to be mixed with the vegetable mixture. Transfer the rice idli batter to a large bowl

Add the vegetable mixture to the batter 

Slowly add the vegetable mixture that was prepared to the idli batter.

Mix it well with batter so that the mixture is evenly blended to the idli batter

Add little water to adjust the consistency of the batter

If you find the idli batter thick, you can add little water to adjust the consistency of the batter.

You must make sure that the batter is not too thick or too runny and just at the right consistency

Add the chopped coriander leaves and mix well

You must now add the chopped coriander leaves to the batter at the end.

This way you can ensure that aroma of the coriander leaves is retained well in the idli batter

Add water to the idli cooker

Take the stainless steel idli cooker and add one cup of water to the bottom of the cooker.

Dont add too much of water in the idli cooker as the water may boil over the idli while it is cooking

Grease the stainless steel Idli Moulds 

You can use clarified butter or ghee, or any vegetable oils to the grease the stainless idli moulds.

Apply the grease or pour few drops of oil in the moulds , then spread the oil to the moulds.

Use ladle to add vegetable idli batter to the greased moulds

You must now use the ladle to take the vegetable  idli batter and slowly fill the greased idli moulds. 

Please ensure that you do not fill the idli mould to the brim. After steaming, the idlis will rise, so, make sure you leave a little space for

them to rise. Ideally, you should fill a little over three fourth of the idli mould.

Place the stainless steel Idli moulds in the idli cooker

You must carefully place the idli stand after filling the batter into the idli cooker. 

Place the idli cooker on the stove and turn on the stove

Cook the vegetable idlis for ten mins

Cook the idlis for altleast ten minutes. 

You must sure that the cover the lid well. If not the steam will escape from the cooker and the idli might not cook well

Make sure idli is cooked well

After ten minutes, you can use a knife or fork to poke into the idlis to check if they are cooked well.

With a well cooked idli, the knife or the fork will come out clean.

Remove the stainless steel Idli moulds 

When you are sure that the idlis are cooked well. Allow it to cool for sometime otherwise you will burn your hands while removing the idlis.

When the idlis are cool, remove them and take it in a bowl

Serve the hot vegetable idlis

The tasty and delicious vegetable idlis are ready to be served. Serve it with yummy cabbage kurma chutney.  Sambar is one of the best accompaniment for idlis and you can also serve it with hot delicious sambar as well.  If you can also make variations to the vegetable idli by just using beetroot to make homemade pink idlis.

What should I do for a hassle free cooking of Homemade Vegetable idli

1. Using a variety of vegetables

3. Dont overcook the vegetables

You must sure not to overcook the vegetables as its becomes mushy paste. It should be cooked enough to be seen as small chunks when mixed in the idli batter.

4. Alternate way to cook vegetables

If you dont want to pressure cook the vegetables. You can also steam the vegetables and this way you can ensure not to lose much of the nutrients from the vegetables

Coriander leaves has lot of health benefits as it has lot of nutrients, good for digestion. It also imparts a distinct and refreshing flavor to any dish you cook.
