Add all the wet ingredients to the bowl

Take a large bowl to mix all the wet ingredients – Curd , Vanilla Essence and Coconut oil

Add four tablespoons of curd, 1 teaspoon full of Vanilla Essence and 4 tablespoon of Coconut oil to the large bowl. Make sure all these wet ingredients are mixed well

Add all the dry ingredients to the bowl and mix well

You should now add all the dry ingredients – 1/2 teaspoon of salt , 1 teaspoon of cinnamon powder and blend them well

2 teaspoons of Baking Powder and 1 teaspoon of baking soda to be added and mixed well with the wet ingredients

You should mix 1/2 cup jaggery powder , 4 tbsp of cocoa powder and 1 cup of wheat flour. Now whisk well so that all the ingredients are mixed well and make sure no lumps are formed

Grease the tin, place the cake tin with batter and cook

Grease the cake tin with little butter on the sides and the bottom. Add the cake batter to the tin. Gently tap the tin to make the cake mix even. This will also avoid forming air bubbles.

Pour 2 inches of water to the pressure cooker. Place a stainless steel stand at the bottom of the cooker. Now place the cake tin.

Turn on the stove. Close the cooker lid without the whistle. Cook the cake for 40 minutes on the low flame

After 40 minutes when the cake is cooked, remove the cake tin. Let it cool to the room temperature.

Can i mix the Dry and Wet Ingredients all at once ?

It is always a common rule to mix wet ingredients and dry ingredients separately for a cake mix. Because when you mix seperately , there is less mixing of cake batter. You can avoid forming air bubbles or lumps in the cake mix. You get better texture to your cake. It will be lot more fluffy when mixed seperately.

Can i bake the cake with Maida (All purpose flour) ?

Yes, You can use the all purpose flour for the cakes. Typically all purpose flour is used for any baking. It was my personal choice to use the wheat flour. Since my kid love cakes i try to use as many healthy substitutes for the ingredients.

Another Important thing to be noted is the cake will be light when you use all purpose flour. While it will be a dense cake with wheat flour.

Can i apply the butter cream frosting when the cake is hot or warm ?

No, Please do not apply the chocolate frosting to avoid the melting of the frosting. You may apply the chocolate frosting or any flavored frosting to the cake and store it in the refrigerator. Other best way is to bake the cake. Put it in a plastic wrap. Store it in a refrigerator and apply the butter cream frosting just before use.

Can i substitute curd in my recipe?

Yes, You can substitute the curd with eggs for a homemade delicious chocolate cake. Since the current blog is an eggless cake , curd is the important ingredient. You need to follow almost the similar recipe for egg cake.

But please remember that every ingredient in the recipe may not have a substitute. You can also add some additional ingredients like banana as well to make it more delicious Chocolate Egg Cake.

How do i avoid the cracks on the top of the cake ?

Main reason for the cracks on the cake is not maintained the right temperature. When the over is too hot, the outside of the cake and uneven cooking inside. This can also happen if the cake tin is too small.

When you bake in the pressure cooker , do not open the lid of the cooker very often.In the microwave oven, do not open the door every often. In the convectional oven, maintain the right temperature. Reason being, this will alter temperature and results in uneven baking.

I would like to share some of the simple tips I had followed. These tips helped me for a successful and easy baking.

Make sure the bananas are ripe

There should be many dark brown spots on the banana skin. No green colored skin if it’s a yellow banana. Slightly pressure the banana to check if its soft

Avoid blending the banana to paste

You do not blend the bananas in the blender to a smooth paste. It is good to keep the mashed banana coarse. It helps for the good texture of the cake.

Make use of healthy fats

Instead of using some random vegetable oil, you can use the coconut oil, ground nut oil or even unsalted butter. These are healthier options to use in a cake

Mixing the batter well after each ingredient

You make sure to beat the mixture after adding each ingredients to avoid lumps. it also helps each ingredient to mix well with the cake

Avoid usage of sweetened cocoa powder

You don’t need to use the sweetened cocoa powder. Reason being , the ripe bananas and jaggery powder adds the required sweetness to the cake

Make use of healthy sugars

Instead of using refined sugar, you either go for palm sugar or coconut sugar. These are other healthy options for sugar

Enhance taste with Cinnamon

It enhances the taste of your cake. I love the cinnamon taste and its aroma. Its the most important spice in baking

Make sure the cake is baked well

You can use a tooth pick or a thin knife to check if the cake is cooked or not by pricking into the cake. If the toothpick or knife comes out clean, it means cake is baked well
